Wine made from the fine red variety. It was harvested by hand in boxes of 12 kg and is immediately taken to the winery for entry into the selection tables. The fermentations are carried out in wooden tanks with temperature control until obtaining a good polyphenolic extraction that will bring the generous color and the firm structure that constitute part of the personality of this wine; And finally a breeding between 14 and 20 months, depending on the characteristics of the vintage, is made entirely in new French oak barrels. These barrels of the most prestigious Bordeaux brands (Radoux, Taranssaud, Saury and Vicard) represent an important investment in oak, since harvest after harvest, all the wine that is made in Alion will remain in new barrels that, after being abandoned to be bottled , Will not be used again by the winery. Once the wine is taken out of the barrels, it will remain no less than 15 months in the stillness of the bottle, where it will finish assembling all the primary aromas of the fruit with the nuances of its delicate aging, resulting in a fleshy wine , Complex and intense, but in which elegance plays as a differentiating element and hallmark of the winery.
